You will visit a family-run Molise company in the province of Campobasso specializing in the collection of truffles and the transformation of this ancient delicacy. In the centuries-old woods of Molise, the company searches for truffles and, throughout the year, collects fine white truffles, black summer truffles, bianchetto truffles and black truffles. Immediately after the harvest, part of the truffle is selected and transformed into a modern laboratory, as in many truffle companies in Italy. The company has developed a large panel of truffle-based products, recognized for their excellent quality. When you reach the excursion area, you will be accompanied by the guide and by truffle dogs who are experts in the search for the precious tuber and you will attend a lesson on truffle growing. Later, we will return to the company to visit the laboratory where the truffle is processed. Finally, a tasting of typical Molise dishes with freshly picked truffles awaits you. You will be able to taste various typical products of Molise cuisine based on truffles: cheeses, salami, ricotta, canapés and risotto, paired with local wines, including some Molise docg.
